Catching up...
So I think the last time I blogged was Wednesday, so I'm gonna have to go back a few day! Thursday was a busy day. I can't tell you what we had for breakfast or lunch that day, but I can promise you that both of those meals were eaten! We took a baby present to a friend who is having her first baby, we went swimming at another friends house, oh and then we came home to a broken air conditioner and a house that was very quickly approaching 90 degrees and that sucked. Luckily I was able to get someone over to fix it that same day.
I had talked in my last blog about whether or not I was going to make hamburger buns for the black bean burgers that we were having for dinner Thursday night. I ended up making them. I figured, what the heck, my house was already 90 degrees, what will it hurt to heat it up even more when I turned my oven up to 450 to cook the buns. They turned out great, and everyone ate without complaint! They even wanted seconds.
I'm actually really proud of the kids and myself! I'm proud of Ray too, but he really eats anything without any complaint and he eats lunch out a lot because of work so he has had more variety then we have had. I have even been able to go to Target and Walmart and buy just the things I need and not buy the food I am out of, for instance, I'm out of bread! But I am more then capable of making my own bread, but so far I haven't had to.
So because the kids have been such troopers and haven't really complained all that much, and they ate oatmeal for breakfast and didn't complain I decided they need a treat. So I made them all dress up like cows to get a free lunch at Chick-fil-a, because it was cow appreciation day. It was great. And because I have been such a trooper, Ray took me out to dinner last night! The kids had homemade pizza...because it was friday, and Ray and I went to Hollies Flatiron Steakhouse. It was so good.
Today it was oatmeal again for breakfast and the older kids had lunch a birthday party. I'm making spaghetti for dinner. Then have a I confession to make. After dinner tonight I will not be cooking again until Wednesday night! Ray is going out of town for a couple of weeks, so whats this girl gonna do...pack up all the kids and myself and go to my parents house in Kansas of course!
In the few short days that we will be there you better believe I will be eating like a crazy person. Seriously. But then it will be back to our budget when I go grocery shopping for the rest of the month when we get back. This last two weeks has been eye opening. I have learned there are things we can live without, my kids have learned to be thankful for what they have been given, and a bonus, I have lost a few pounds because I can't afford to buy junk food. Word.
